I fired up a Lg. BGE about 2 hours ago
Place setter
drip pan with water/vinegar marinade
grill top
v rack with an 8.5 lb boston butt.
I have the Maverick temp probe on one side of the grill.
As of now i have a 250 dome temp. and 210 at the grill
the meat temp has risen about 40 degrees since starting.
Does this sound about right.
1st attempt with a boston butt...and the Mav.

Sounds exactly correct... There will be a difference between grid temp and dome, dome being higher. At the beginning of a cook the difference is greatest as the cook goes on and if it is a long cook the temps will somewhat equalize. Very seldom do they match.
Most of the time I cook at grid temp, not dome. I use a 25° difference when someone one gives a dome temp guide. Just a note. On the forum, unless someone says grid temp the temps always refer to dome temp.

About an hour after my post....the grid temp started rising. Right now I'm looking at 250 dome and 230 at the grill.

All sounds good!
Now you are down to a 20° difference which is typical.
Make sure your egg is stabilized before going to bed - or you won't be a happy egger in the morning.
250° is a pretty good dome temp for overnight cooking.
For that temp, I set my large bottom vent about 1/16" to 1/8" open, top slider shut and petals 1/3 to 1/2 open.
