Mr. Toad's pork loin question

When doing Mr. Toad's pork loin if I'm going to use dried fruit do you have to soak the fruit first or just put it in dry??? Has anyone tried sliced almonds in place of the cashews??? Anything not to use pineapple slices (from a can) in or on top of the loin???

    I did 2 loins last week and used "Sun-Maid" Fruit Bits. Turned out great. Can't wait to try it with other fruits.

    Congratulations to ya, now help me here please. What are "Sun-Maid" Fruit Bits????? Are they in a bag or a can??? As you can see, I don't know much about dried fruits.

    New Bob,[p]The beauty of Mr Toads recipe is in its adaptability to use almost anything as the suffing and still produce a winner. The meal is entirely the meld of the mix in your mouth.[p]Dried fruit (unsoaked) work well as they provide a nice chew to the meal. Using almond slivers adds their flavor during the chew along with a nice texture to the chew. Fresh fruits can tend to provide a lot of moisture, making the result a bit too juicy. Dry the pineapple before using (you can baste with the juice, if you desire). Always use a jam and/or marmalade with the stuffing to provide a base for the fruits to mix their flavors with.[p]Go for it.[p]Spin

    I was thinking of putting a couple of the pineapple slices on top of the bacon as well as a little inside. Thought it might look good if visible. What do you think???

    I used dried apricots, apples, whatever came in the mixed bag of dried fruit. You'll find them all in a section in your grocery store. The last time I did it, I used Bronco Bob's Roasted Raspbery Chipotle sauce, dried apples and cashews. Do whatever you feel like!     New Bob,[p]The pineapple slices on the outside would be nice. A little pineapple flavor to the bacon can only be a good thing.[p]Dry the slices with paper towels for use in the stuffing.[p]Sounds great.[p]Spin

    I got mine at Kroger in the dried fruits area. "Sun Maid" is the brand but any brand would be OK. They are probably most noted for their raisins and prunes. They come in a colorful plastic 7 Oz. bag. [p]Big John
