Quick question please

Being from Arkansas, I have some really nice Catfish filets that I want to do on the BGE tonight. I usually deep fry catfish but want to just sort of bake these with a simple rub on the egg.Can anyone help me out. Thanks

    I am thinking cut them carefully into 4 inch wide pieces crosswise (to aid flipping). Then some some salt, pepper, lemon pepper, cayenne...maybe some garlic powder...rub it on and let sit for maybe 20 minutes. Cover with a nice coating of olive oil...maybe even peanut oil. Grill over a hot estabished fire (550-600 maybe). Carefully spray hot grate with pam or wipe with oil. For 1/2 inch thick maybe 3 minutes on first side...flip carefully by jiggling spatula underneath, and using your fingers or a second spatula to support your flip. A little tricky, but I like fish right on the grate. You could also use a fish grid. Anyways, cook on side 2 til it JUST wants to flake. Remove carefully.[p]Just rambling. Hope it helps!

    I season with much the same stuff but I then put them in a glass dish, melt a stick or two of butter and pour over the filets. Then put the dish in the refrig so the melted butter can congeal. After it sets, I then grill.

    OOHHHHH...does that ever sound good. I just bought some catfish filets today, for dinner later this week. That dinner might have to be moved up a few days now. One question though? Do you do these direct, or put something under to catch the excess butter? [p]~nikki
