Rookie here - indirect cooking a 5 lb chicken at 350 degrees - about 2 hours ok?

    Shouldn't take quite that long. Bump the temp to 375-400 and it will take maybe 60-75 minutes.

    I think you'll find that your cooks will end up better if you cook by temp, not time. Ice the breast only, for about twenty mins, so that both the front and back finish at the same time. I pull breasts at about 165F, and usually the dark meat is done when juices run clear about 175F.
