Use a meat thermometer. That's the safest why to go and you'll always get consistent results.

you could use 20 minutes per pound, but that's a very, very, very general figure. There are many factors that impact on cooking time ie. thickness, how much bone, temp, moisture etc... [p]good luck

Allison,[p]Approximately 2 1/2 hours at 250°F. I like to pull mine at 125°F for a med rare mid section.
