I just got some 1.5 inch thick filets. What is the best time/temp for medium.
Thanks

RICH,
Go by temp and don't worry about time. Temp for medium is 140. If steaks are not thich enough for reading, stack em and then slide the probe into the stack.

RICH,
I use the 700 degreee method. I get my egg up 650 to 700, put the filets on and sear for 3 minutes, flip and sear other side for 3 minutes, flip once more and shut down all vents and dwell (get let steaks sit in egg for 4 more minutes). I also have my steaks sit out 1 hour at room temp in extra virgin olive oil before cooking.[p]Good luck,
CWM
