Trying to eat healthy...

The She-E-O and I made a pact to start eating healthier, so there will be a lot less pork and chicken wings going through the old egg, but it doesn't mean you can't eat tasty grub.
This is a salmon recipe that I used to do in the oven quite a bit, merely transferred it into the egg on a raised grid and it was delicious:
- Marinate the salmon filets in 1 cup of pineapple juice, 2 TBS of lemon juice and 2 TBS of Cointreau. Throwing it all in a zip-lok and refrigerating for an hour works great.
- Combine 2 TBS Brown Sugar (Turbinado of course), 4 Tsp Chili Powder, 2 Tsp grated lemon rind, 3/4 Tsp ground cumin, 1/2 Tsp salt, and 1/4 Tsp ground cinnamon.
- Remove the salmon, pat dry with a paper towel and coat liberally with the rub mixture. Return to the fridge for 30 minutes
- Stabilize the egg at 400, rasied grid direct
- Put the filets on and egg for 12-14 minutes (for 8 oz filets)
- Use a fork for the "flake" test, and serve immediately! YUM!

Looks great Austin and very healthy...but dont forget..you're one up on healthy just by cooking on the egg over how 90% of other food is prep'd

When I was cooking on the gas grill I'd typically cook a couple of 16 oz. steaks of indifferent quality. Now I cook one expensive 12 oz. prime boneless ribeye for the two of us and we enjoy it a lot more.
