Ideas for Citrus Chicken???

So I have a half dozen boneless thighs and some orange/pineapple juice in the fridge so I'm thinking "citrus chicken" on the Egg.

My thought is using about a half cup of oj/pineapple juice, some soy sauce (maybe 1/4 cup) and brown sugar (another 1/4 cup). Maybe add in some cayenne pepper and salt.

Marinate the chicken for an hour and then grill on the egg on an extender at 400f or so for 20 minutes. Serve on Jasmine rice and top with a grilled slice o' pineapple.

Anyone have any suggestions/recommendations?

    A touch of ginger would kick it a little or a touch of dried mustard. I use either or both a lot in citrus base. Julie

    I'd add a tad of olive oil or even sesame oil if you have it. Another time instead of using the pineapple juice try using the drink called Splash or Hellman's orange vinaigrette or tangerine balsamic. Anyway, what you have going tonight sounds great!

    Ginger! That was the missing ingredient.

    But I was underwhelmed by the chicken. I wasn't bad by any stretch, but it just lacked that wow factor unless I got a bite of grilled pineapple with the chicken.

    I marinated the chicken thighs in 1 cup orange/pineapple juice, 1/4 cup soy, 1/4 cup brown sugar, 2 tablespoons sesame oil, and 1 teaspoon ginger for and hour. Next time, I'd let it go to 3 or 4 hours.

    Grilled them for 20 minutes, brushing with glaze at 10 minutes and 15 minutes. The glaze was 1 cup of oj/pineapple juice, 1 oz of triple Sec (orange liquor)), fresh grated orange rind and of course more ginger.

    Topped each piece with a slice of grilled pineapple.
