Fish Grid Question

I am smoking my first ever salmon today. Before placing the salmon on the grid, should I baste the grid with anything? Also, does it matter how long beforehand?

  • not sure what you mean by 'baste'. .. .you can certainly dip a paper towel in olive or vegetable oil and brush it over the grid right before putting the fish on so that it doesn't stick to the grid. .. .what i like to do is take 3 or four large lemons, slce them up, then lay them all over the grid and then lay the fish on top of them. ... does two things. ..one, keeps the fish from sticking at all. ..and two, adds some flavor and moisture to the fish. ..won't give you any 'grid marks' on your fish, but more than makes up for it in added flavor and moisture. .. .
  • Thanks Max. I use "baste" loosely I guess. I just meant what was the best thing to rub on the grid. I like the lemon idea. I'm going to try it.
