Freezing my Butt

I'm 12 hours into my first pork butt, and looking forward to delicious pulled pork sandwiches for dinner (thanks to the great "how to" information collected up here at the forum!)
Here's the rub: there are only two of us home for dinner, and I'd like to put some away for another day. How does freezing the leftovers work out? I'm thinking a little sauce in with pork, a fast freeze and a slow defrost ought to work. What's the advice of the eggsperts? Thaks in advance.

I vacuum sealed mine before freezing. Reheat with a little chicken stock and it was just like fresh pulled. I am sure others have more ways to do this.

Ditto for me. Reheat in simmering water (I use a wok on the stove) about 25 min.
Can't tell it's not fresh off the grill.
