We do these roast quite often, they run 10 14 pounds, we cook at 225 to 250º and mop evry 45 to 60 min with a product called BourbonQ. Cook to 125 to 135º internal.
You can start out at a higher pit temp if you have folks that like med well but bring the temps down for the bulk of the cook.

Do you use a drip pan? How long does it normally taker per pound to cook?

Use a drip pan and figure 5 to 8 hours to get to internal temps you want.

How about a much smaller top sirloin? 4-5 lb variety is what I do most often. Thoughts on that? I've done some great ones, but seem to be by accident!
