I'm going to do wings for the first time and my wife wants them crispy. Do I do them direct or indirect. I am also going to smoke with Guava wood. I have a grill extender, should I use it? I'm thinking I should use a grill extender on direct but don't know what temp or for how long. Please help. Thanks in advance

i've done them direct and indirect. start them with the smoke at around 300 for about an hour, then bump it up to 400 for about 20-30 minutes or so to crisp up the skin. you can also add cornstarch to your dry rub if you are using a dry jerk rub.
raised grid? it's really up to you, but not really necessary, but won't hurt. if the skin isn't crispy enough for ya, bump up the temp and wait 10 more minutes

Please share your method and marinade; I have never cooked jerked chicken wings on the egg; but want to try this weekend.
Thanks;

You can buy a good jar of jerk spice(wet) in groc stores. I mix some with beer and put into a ziplock bag and marinate overnight. Take the wings out and let air dry(wear gloves while you do this or wear gloves when you use the restroom later.)in fridge. I like to shake mine in a thin coat of corn starch to help them crisp up. Cook at 375F high in dome. HTH.

Instead of using Beer, try Barcardi white rum
