Not much to tell. I wrapped a stip of bacon around some burgers. Is was that simple. Oh, and I did add some DP rub.
Only thing I would suggests in not using the TRex method to cook them. The bacon will not cook fully. I did these at 375 to 425 for 15 minutes or so. -
Those burgers sure look great!!!!!!!!!!!!!!!!!! Did you grind the Brisket yourself????? Suppose once you grind the brisket..there is no need for changes in Collagen :laugh: :laugh: ... what´s the difference with traditional beef burgers????

I have the butcher do it. I ask him to double grind it and leave the fat on. I think it has better flavor that ground chuck. I have been using brisket for about two years and swear by it. When we hae guests, they just think I'm a great cook. I don't often share the secret!!

Hey man. Glad you're enjoying your summer. Yeah, it's just a flat. That's what they have most of the time at Publics, unless I ask for a full packer (special order).
When you getting back to town? Bunch of us crazies have been getting together every so often to cook, drink a cold one and tell "the big one that got away" stories. We need ya!! -
