Thermometer wire placement

Should a thermometer be placed through the hole in the top of the egg? I am concerned that closing the lid on the wire will allow air into the egg.

Just pass the wire over the gasket and close the lid. The gasket will seal around the wire enough that any gap won't matter.

You could. You will be fighting probe placement & wires every time you open the egg.

Go through the gasket. Yes, after time you will may get some air leak but not enough to affect your egg and your cooking or the results.

Based on recommendations from forum members I first wrap the wire in foil and then lay it on the felt an close the dome.

Aluminum foil = heat conductor.

As recomended from Rock of Rock's BBQ, maker of the Stoker - "Don't wrap the probes in foil".

A lot of people do wrap it and it does keep the probe wire clean.

Are they recommending that the wire not be wrapped or just the probe? I wrap only the wire that extends from the probe but no part of the probe.

Since I usually only use my probes on cooks where I use my plate setter, I always route the cable over one of the 'setter's legs to keep it out of the path of the direct heat.
