Picked up some fresh sausage links at Whole Foods yesterday and I'm going to Egg them today. I've got some with Chicken, Garlic, Cilantro and Bell Pepper and some with Chicken, Apple, Spice. I'm thinking direct heat at regular grid height, turning now and then, with some chips thrown in for smoke. Dome around 450? Cherry or Mesquite?

Open to any and all suggestions. Thanks.

  • That will work.

I like to do mine low and slow using a platesetter, drip pan and smoke. Just like in doing pp.

There will be lots of grease and flare ups doing a direct cook.

    Be careful and enjoy!

I like to do them in cast iron. Brown up well sausages and remove to a bowl lined with paper towel. Add sliced potatoes, onion, peppers, pepperachinis and a lot of liquid from them and whatever you like. Cook them all up with pan cover, turning and flipping frequently. when potatoes are done throwback in the cooked sausages cover and get everything warm and cozy again.
