sausage time?

We're planning to do smoked sausage one of these days. Anyone have good recipes? All I have is my husband's Italian grandmom's recipe, but looking for ideas.

We're going to try the KitchenAid and a meat grinder.

We did get the larger one for a song ($199) so I'm anxious to really get cracking on the sausage.

    There are lotsa folks on here that make sausage so I'm sure you'll get some good responses.. one that comes to mind that I've heard talk about making it is AZRP..you might ping him if you don't get any responses... ;)

    The KA grinder does a good job of making small batches of sausage. One thing to keep in mind about making sausage it there is fresh sausage and smoked sausage. The smoked sausage requires a curing agent be added for safety reasons, due to the amount of time it is in the danger zone during smoking. Fresh sausage like Polish, bratwurst, etc doesn't require a cure. To get you started, I would highly recommend you try one of the Hi Mountain sausage kits, they include the casings, the seasonings, cure, and most importantly instructions. This will get you started safely and it is darned good sausage. I like their Italian, which I put in the cure and smoke. Tastes awesome in a low country boil. -RP
