A couple years of trying and I think got the steak figured out!! Before, I let the egg get up to 500 or so. I keep daisy on top with slide open, removing it gave me bad flash backs. Anywho, I used to put meat on once teh egg was up to temp. Tonight I let all the coals get hot, not just the middle.
Plus, the center of the steak was still frozen. I did 5 min on one side 3 on the other.... bada bing, bada boom.... best steak I've ever done on the egg.
I think it was letting all the coals heat up before slapping the meat on...
Now, If I can only get this rib thing down...

Wardster,[p] What about thickness??? Will that work on a steak 1" thick the same as a steak 2 1/2" thick??? I'll be happy to be over for the results, just say when, I LOVE STEAKS!!![p]Sparky

Actualy, It was an inch think. My last omaha steak. I bet it would be better on thicker steaks.. mmmmmmm
