Grilled Oysters receipe for Beli
Devo
Posts: 51
I brought these back from Florida, shucked them and try your best to keep the liquor in the shell. I got this receipe from the book "Grill It" by Chris Schlesinger and John Willoughby and this is a great book. They have another book I've had for years that I also love and its "The Trill of the Grill".I recomend that any serious griller should have these two books.
The name of the receipe is Grilled oysters on the Halfshell with Pancetta and Barbecue Sauce
2 dozen oysters shells scubed
8oz pancetta
3T butter
one quarter cup ketchup
juice of 1 lemon
2T fresh parsley
6 dashes Tabasco
3 dashes Worcestershire sauce
kosher salt and fresh cracked pepper
while you wait for the egg to come up to 350 shuck oysters by removing the flat shell and leave the liquor in shell and losen oyster from shell. Then saute pancetta until crisp and drain on paper towel. In sauce pan melt butter, whisk in ketchup, lemon juice, half the parsley(reserve the rest for garnishing), tobasco, worcestershire sauce, and S&P, and remove from heat.Arrange the oysters over the coal and grill until edges start to ruffle(2 to 3 min). Spoon 1T of sauce over each oyster and continue to cook until sauce is bubbling hot. Tranfer to platter and sprinkle with parsley and pancetta and enjoy. Careful sheels will be hot.
