I decided to make some chicken wings for Friday Night Fights tonight and tried two recipes to see which one came out on top.

I made them the same way except for the finishing sauce. All were seasoned with Poultry Perfect Rub (from the book Smoke and Spice by Jamison) and then cooked indirect at 375f on the Egg for about an hour, with some cherry wood chips tossed in.

At halfway through, I tossed half of them in a white bbq sauce (Big Bob Gibson's clone) and put them back on. At 10 minutes left, I tossed that same half in more sauce (a fresh batch, no cross contamination) and tossed the other half in a basic buffalo sauce.

The results? The buffalo sauce ones won a majority decision (10-9 rounds on the score cards :silly: ) but the three judges (wife, 19 y/o son, myself) all agreed the white sauce ones were perfect for people who didn't like the heat.
