Meatloaf Recipe

In an earlier thread, Dublin and Ed F. asked for my meatloaf recipe so I thought I would post it. First off, it's not really my recipe, it's Mike Harmon's of Outdoor Home. [p]I use his ingredients exactly except I season it with Montreal Steak Seasoning since I don't have his Ultimate Steak Rub.[p]Other variations: I cook it indirect with plate setter, drip pan. I have a real handy wire mesh meatloaf basket that I highly recommend. It can get smoke from all sides that way. The Jack Daniels chips seem perfect for the smoke, by the way.[p]Also I cook at about 330 dome temp instead of 225. I'm just not that patient. It turns out great that way, takes about an hour and 30 minutes to hour and 45 minutes to hit just under 170 degree internal meat temp.[p]Another note: We halve the meatloaf before cooking so it really makes 2 meatloafs for our size family. That feeds 3 to 4 hungry people. I vacuum pack and freeze the other half to cook an easy meal some other time. You will like this if you like meatloaf![p]Bob
