Here a the peppers sweating so it is easier to remove the skin.

Chorizo stuffing cooking in a cast iron skillet.

Once the chorizo cooled down removed the extra oil and mixed with queso quesadilla for stuffing.

here are the stuffed peppers.

the finished product, turned out really well..... the batter needs a little tweaking though.

Those look great. How did you cook the peppers after they were stuffed?

For the batter, I separate the eggs and whip the whites to stiff peaks then fold the yolks back in, flour the pepper and dip in the egg. -RP

look at azrps post, that is exactly how i did it and then once you have the batter on fry it a pan containing atleast 2 inches of oil.

May need a little tweeking but looks darn good from hear!
