Here a the peppers sweating so it is easier to remove the skin.

Chorizo stuffing cooking in a cast iron skillet.

Once the chorizo cooled down removed the extra oil and mixed with queso quesadilla for stuffing.

the finished product, turned out really well..... the batter needs a little tweaking though.
