time & temp. turkey

First turkey. What temp and how long to cook 14lb turkey. I will be cooking after church today.

    I cook mine at 350 for 20 minutes per pound. 14 lbs would probably take about 4-5 hours. But I start my turkey the day before by placing it in a brine. I think this makes the skin softer when it comes out. But even if you don't brine, the Egg with cook your turkey to perfection!

    Here's my brine recipe:

    2 gallons of spring water
    2 cups of kosher salt
    1 cup sugar
    1/2 cup of dry tarragon or 12 fresh tarragon leaves
    2 teaspoons of black pepper

    I mix all of the ingredients in a 5 gallon paint bucket (buy one new at Home Depot or Lowes) and place the turkey in the brine. Leave in the fridge overnight or up to 24 hours. I then take it out of the brine and let it rest on the counter to bring it closer to room temperature. Rub it down with your favorite rub and then cook the turkey. Remember, if the the turkey is ice cold from the fridge when you put it in the egg, it will probably take longer to cook and you are going to have to monitor the temperature more in the beginning to get it to a consistant 350. Have fun!
