Brisket

I’m start’n to get the big head as my cooks turn out better and better each time I light up the Egg. This time it was a small brisket. Really nothing more than an after thought while shopping for groceries at Kroger this morning. It looked good and I figured I would do a plain rub/slow cook using some pecan/apple smoke. That was 10:00 AM. I gave the brisket a thorough rubdown with some Fiesta Rib Rub and then another good helping of Montreal Steak Seasoning. I wanted some smoke penetration so I refrigerated the meat while I filled the firebox and lit one Weber cube. By the time I soaked some pecan chunks in hot water, the fire was ready. I placed the wet chunks around the edge of the lump, installed my plate setter legs up, put a dry pan to catch the drip’ns and on she went at about 10:30 AM. I plugged my alias Polder (looks just like the real thing) in and went to visit my mother-in-law for lunch/jumbo margarita at a favorite Mexican restaurant. When I got home at 2:30 PM the Egg was holding its own at 220° and internal temp was 158° so I left it right there until 4:45 PM when I kicked it up a notch to 300° for 15 minutes. Took it off at190° internal. I could tell when I opened the lid this was going to be one fine piece of meat. I wanted it to set awhile before cutting into it but my wife already had a knife in hand. We ate about two inches of that sucker just standing there at the counter. It was absolutely the best brisket we have ever had… bar none. I can’t wait ‘til I cut into the thick part so I can see if I got a good smoke ring. I think I do and I will be taking/sharing photos if I’m right.[p]Awesome Spring Chicken
