Tuna jerky

Anyone have a good recipe? I have had some before that looked just like thick cut jerky, it was GREAT. They have gone out of business. :(

YUP! I did a search and just came up with smoked tuna steaks, not what I was looking for. Was this a dumb question?

Sure you are not thinking of Salmon? I've had some cured by the native Alaskans that was fantastic and looked just like you describe.

Yes tuna, it was a smoke shop in downtown Morehead City N.C. that had it. I have tried to make it or buy it in any shop I have been in. Thanks bill, but I am going to have some left over tuna and thought I would try again. Never have tried any on the egg & thought my egghead eggperts could help.

my 2 ° i would cure it so you don't poison yourself and then cold smoke it like you would cheese. see TNW

Here are a few that I did a month or 2 ago. Can't remember how long but the temp was 225 - 250 indirect I think about 2 hrs with heavy on the smoke. Went great with beer and made smoked fish dip out of the leftovers. Hope this helps.

OK -first off, no you aren't crazy for asking!!
I've never had tuna jerky, but I have had halibut jerky and most people haven't ever thought of doing it. I imagine it would be similar.
You have to cut it a certain way and carefully season it so it isn't too overpowering... then there's the drying before smoking....etc
I was planning on making some out of the little 25lb chicken (small halibut) that Brent caught the other day. If it comes out I will post the results and then we can be the fish jerky queens! :laugh: -
:P I remember the tuna as being sweet. :P I have never had any halibut jerky,but how could that be bad? :laugh:

NOOO dumb question at all! I just can't remember a time when I've been out on the trail, or up in a stand thinkin', "Dang, I sure could go for some dried, chewy, fish right now!" If you make some, AND, it's palatable, I would be willing to try some. I've just never heard of it before.

Don't laugh, a friend of mine used to live in Tokyo and would chew on, as I recall, squid sticks at the sumo matches.
