Steak and sweet potato

Was just me for dinner tonight, and since tomorrow is my birthday, I figured I would splurge.
I picked up a nice ribeye steak and a sweet potato. Brushed a bit of EVOO on the steak and covered it with Dizzy Pig's Raising the Steaks. The potato was sliced up into fries, put in an ice water bath for fifteen minutes and then drizzled with EVOO and Dizzy Pig's Swamp Venom.
MAN, it was delicious. This was the second time I used the Raising the Steaks, first time was good, but nothing great. This time I let the rub sit on the steak for about an hour (45 minuts longer than last time) and used some EVOO (I didn't use it the first time). Now I realize what everyone is talking about. I will be ordering both of these spices shortly. the Swamp venom was great, a bit hotter than I expected, but still awesome.
Sorry, no pictures on the egg, because I thought the camera wasn't at home. Didn't realize I had the camera until everything was done.
Oh yeah, steak was Trexed, 90 seconds a side sear at 600, 10 minute break, then 3 minutes a side at 325, perfect!

HAHAH Now you know why it's called Swamp VENOM!!
Few things finer then a Ribeye cooked to perfection and a Sweet Tater!!
Good Job.. -
Celtic Wolf,
Yeah, nothing a bit of ranch couldn't cool down. I knew it was supposed to be hot, but I guess I just got carried away when I sprinkled the fries.
Thanks for the compliment! -

Looks great. How long were the potatoes on?

Looks tasty! What does to "trex" a steak mean? Been trying to figure that one out....

Gordon,
I put the potatos on for 15 minutes at 300 before I seared the steak. I pulled them off to sear the steak and put them back on for another 5-6 minutes when the steak was in the roasting part of the TREX at 300 again.
The thinner pieces were done perfectly, the larger ones were still a little hard on the inside, but just barely. -
Thanks fot the helpful info. Didn't wan't my dinner to go up in smoke.
I crack myself up sometimes. Happy Eggin
Gordon
