Pork Tenderloin

Did a second cook today. Had prepped it last night and at the last minute we picked it up and went out with some friends for boiled crawfish - I hate when that happens.

Pork Tenderloin - Butterflied it, seasoned the inside with Tony Chachere's, put down a layer of spinach, then put some mozzaralla cheese that was doctored up with garlic and chives, and then another layer of spinach. Wrapped it up and then wrapped the whole puppy with bacon - I know heart attach city - pork wrapped with bacon? Remember that the tenderloin can get a little dry (not on an Egg but that's my excuse anyways). Seasoned the outside with Dizzy Pig Dizzy Dust.
