Okay folks, I am looking for suggestions for tonight’s dinner. Been doing a lot of the same old thing lately (steaks, chicken, and vegetables).[p]Anybody got a recipe or something that cooks in 60 minutes or less, will appease a finicky wife and kids and that tastes good with beer?[p]I know that the side dish will be corn on the cob. And to whoever posted about soaking them and then cooking them still in the husk, thank you. Very good stuff.[p]Matt.

    How about some grilled fish? Roughy, Grouper, Snapper... coat with oil and a good rub... very tasty.[p]I have been on a grilled shrimp kick as of late. I peel them, marinade in olive oil and seafood seasonings, or olive oil, garlic and parsley. Skewer them and grill for about 3-5 min a side.... very tasty.[p]I found myself in the same lull you refer to and have been doing tons of seafood the past week....[p]I'm still trying to snag a mullet out back. I hear they are very good if you smoke them right out of the water...

    Yes, smoked mullet is very tasty - had some when visiting in St. Pete some time ago. When fly fishing in some of the small bays around Ft. DeSoto the mullet were jumping everywhere. They would even swim between my legs if I stood very still. However, I could not get them to take a fly no matter what I did. Someone later told me that they are vegetarian???? I didn't know any saltwater fish was, but that's what they said. They only way to catch them is with a net or, like you said, to snag one. Good luck - they move pretty fast!

    My first thought was the same as Spring Chicken - how about a pizza? Pizza is always good with beer, but I don't know about the corn-on-the-cob. If you don't have time to make one, DiGiornios and Fraschettas are both very good frozen pizzas. We did a Fraschettas last night and it was excellent (for frozen pizza).

    My favorite recently--Scallops! Absolutely wonderful grilled, and so quickly done your corn won't have time to cool.

    South O,[p]Were going to do a late lunch of shish-ka-bobs...or shishlik as they are called around here. A top round or sirloin roast cut into cubes...soaked for a bit in wine and onions and a little olive oil..meat skewed alternating with the onion. Cooks quick, great with beer.

    How about a nice pork loin. A basic rub and about an hour to cook it. It has quickly become one of my favorite grill items. [p]Would go good with corn, and I assume it would go well with your choice of beverage.[p]Bill

    South O,[p]Pork kebabs. Get some boneless country style ribs andcut them into one inch cubes. Marinate them for a few hours in your favorite marinade (I like Stubbs.) Put them on wooden skewers, and grill them for about 45 minutes (or until they're done) at 350. They're great appetizers, but you can make a meal out of them.
