Mango/Pineapple Speckled Trout

Tried something different with some fresh speckled trout fillets today. Had a real good day catching specs yesterday.
Sauce:
1 mango
2 slices of grilled pineapple
1/4 cup vidalia onion
1/2 cup of Sweet Baby Rays Honey BBQ sauce
Juice and zest of one lime
Combine all of the above and purée
Reduce a bunch of potato chips to crumbs. Roll the trout in the crumbs.
Put the breaded fish in a CI skillet at 350, turn after about 6-8 minutes, spoon on the sauce, and let it go another 10 minutes. Mightyfine.

Those look great Frank. For a twist My wife is into rice crackers and I used the wassibi for breading salmon . Just crushed them up dip in egg then the crackers and came out great.
Trout have been small here lately. -
Maybe next time pineapple, coconut, and Bacardi - Pina Colada Fish :laugh: :laugh:

Looks like it was a bad day to be a mango fruit!!lol Frank you do a lot with fish, Think this will work with cat? Got all I can cook of them for free out of the pond. Looks good.

Absolutely will. Speckled trout and catfish are similar in that neither is an oily fish and you can go in any direction with them: fry/bake/grill. The one small difference is that specs tend to be a little more tender than cats and will fall apart when handling them with a spatula. Although I have blackened trout, it is a lot easier to blacken redfish or catfish because they won't fall apart as easily when handling them.
I forgot to add in the recipe that I used a TBSP of Swamp Venom. -
Time to go fish'en!!
