Salmon with Basil Cream

mmm...all I can say.
Found this in Raichlen's BBQ Bible. Added asparagus and a sweet potato...

The sauce:

-Puree 20 fresh basil leaves, 1/3 cup white wine (I used a Pinot Gris and drank it over dinner), and 2 cloves garlic.
-Xfr puree to a small heavy saucepan and stir in the cream, heat to simmer, reduce by 1/2 , takes about 15 mins.
-Whisk in 1tbs lemon juice and 2tbs unsalted butter. Remove from heat and cover.
The salmon:

- Marinated for 15 mins (while making sauce) with 2tbs lemon juice and 2tbs EVOO, salt and pepper. Once sauce was done, grilled 3-4 mins per side.

Great cook. I see you use a pizza screen for the salmon. How's that work out for you? I have a couple but never thought to use them except maybe for pizza.

yeah- I couldn't find my veggie pan, it worked fine. I soaked a paper towel with EVOO and used tongs, rubbed the grate well, no problems turning the fish.

I have sooo been craving salmon lately. And I do love any kind of cream sauce. But...how much cream did you use?

One thing about you Marge when you post it will be some'en differant and new. 1st pic is "primo"!! There's a resturant in town that would sell that for 30 bucks a plate.
