Jerk Chicken Smoke
Rib Fan
Posts: 305
I was just wondering what the eggsperts would say a good smoke would be to complement the Jerk Chicken that I have marinating as I type this. I was thinking apple due to the sweet which would complement the spicy nature of the chicken. But then I was thinking maybe hickory to match the boldness of the two. Kinda leaning toward the apple as I do not want to over-power the chicken. What are your thoughts or other wood suggestions?
BTW my 3lb picnic roast turned out great last night. Did not get it "pulled" till midnight last night for a 10hr smoke at 250F, but the wait was well worth it. Did it the Elder Ward style with Carolina vinegar sauce but fashioned my own rub. Thanks to those that responded to my cook time concerns.

I personally find hickory a little strong for poultry.
Go with the apple or cherry if you have any. Pecan is also a good choice. -
I sencond the vote for pecan wood. Great on chicken!

Pimento wood is what is used in Jamaica but I couldn't tell you where to get it. -RP

Peach wood is excellent. Also, peach or mango salsa is outstanding as a side with jerk chicken. Or you can toast a bun and slap the salsa on a jerk chicken sandwich. Mmmmmmm......

I ordered pimento wood from here for my brother in law:

I ordered the 2lb bag which was shockingly small for $24.95... kinda like a $180 turkey.

I defer the 04 second delay to the cold weather in Alaska. How you been?
-
I was going to try authentic jerk chicken with the pimento wood last summer until I saw the price.
After that, I just used thin split logs of oak in my offset smoker and it turned out good.
I think when I did jerk chicken in the egg earlier this year, I used cherry, only because I didn't have anything else.Knoxville, TN
Nibble Me This -
For chicken I go wiith Cherry, Apple, Grape Vine or Jack Daniels Old No. 7 .
All of those are not too strong and impart great taste.
I have yet to try peach, but I will soon. Our dead peach tree, thanks to the neighbor, is ready to cut down.

Shouldn't the cold weather make me slower?

Things are good here! The days are getting longer, so I have more time to kill  -
BIL didn't comp?
-
wha?
If by comp you mean share, then no, he didn't. But in his defense, I don't think I had an egg at the time.
Are you going to Eggs by the Bay? -
I need to stay close to Kansas, Toto. My schedule changed to The Coop and Omaha. Then Hotlanta, with any luck.
Fishing going well?
Mike -
Coolio - we will be at the coopfest too if Leroy & Judy will have us!

We fished the salmon derby last weekend, and we're doing it again this weekend. Kinda kicks off the "season" for us.
I totally got skunked, but my son caught this nice 26 pounder (on my pole - I handed it off to him cuz I'm a nice mom)
-
That is what nice mothers do.
I have to have a talk with Leroy, here what he has asked me to cook. :woohoo:
Ribs.
Scampi.
BBQ beans.
Burittos.
I still need to lose the 103 lbs before I can travel. :woohoo:
Glad you are doing well.
Mike -
Oooh - we can finally have that rib-off!!

or I can just bring the salmon & some king crab.... -
Yes we can. :woohoo: As my friend Paulie said on Rocky, "I don't sweat you". :woohoo:
Mike -
Must you keep bringing that up? -RP
-
Of course I have to bring it up!!
Are you and Kim going to be at Eggs by the Bay?
