over cooked a brisket

still darn good, i think i like it better this way. fishing was too good to come back and check on things and when i finally got back the brisket was about 215 internal. a little sauce in the pan and some chopped up brisket and i dont think anyone was the wiser during dinner (i think you can get away with this easier up in newengland than you would down in texas). this was some i packed away before dinner for the next days breakfast. sugared it down the night before, coated it with redeye express and lysanders spicey bourbon rub for the cook and it tasted great. sweet and peppery with the redeye shining thru.
