Tuna Steak Temp ?

I enjoy mine medium rare at the restaurant. 1st go at it at home what is the safe temp to cook to? Thanks in advance.

I don't think tuna is a meat that you need to worry about, temperature-wise. I did some tuna steaks the other night at around 600* for 2 minutes per side, and it was slightly overdone.

Heck, ever have sushi? The Japanese call it "toro," as I recall. Raw as raw can get.

did this twice recently final pics of both are below. seared on the egg. never closed the top. watch the grey line form. first cook pullled at 80° the second thinner piece almost got away from me and came off about 90°

there are different grades of tuna. Some that it is fine to leave rare such as sushi grade tuna. Then there are others that need to at least have the outside cooked. For what you are talking about where you are searing it, most tuna should work for that. Personally I will only go with sashimi grade because it is better tuna.

You did that puppy right...mine was a bit overdone, though my wife and daughter liked it better that way...go figger. No "done" pics, but here are the raw steaks, EVOO'ed and dusted:
