They do something simular at Apple B's resturant hear. They put colored tortilla chips under it. Nice quick good looking cook. ;)

This is a clone of Apple B's dish, the marinade is

    1C water
    1\3 C Teriyaki
    2T lime juice
    2t minced garlic
    1t mesquite liquid smoke
    1\2 t salt
    1\4t ground ginger
    1\4t tequila

Marinade for about 3 hours before grilling

    Mexi ranch dressing
    1\4 C mayo 1\8t paprika
    1\4C sour cream 1\8t cayenne
    1T milk 1\2t cumin
1T minced tomatoes 1\8t chili powder
1 1\2 t white vinegar dash garlic powder
1t minced jalapeno slices dash black peper
those pickled ones in a jar
    1T minced onion
    1\4 t dried parsley
    1\4t Tabasco
    1\8t salt
    1\8t dill weed

mix together in a bowl and store in frig till needed. After grilling chicken spoon mexi ranch dressing over, cover with shredded cheddar/monterey jack cheese and bake till cheese is melted and slightly browned. Serve over totilla strips and with mexican rice.

    Devo,

Do you have a smaller recipe for less chicken. This one seems like you can cook for an army.

    Thanks

Hey Otis, that was just for 4 chicken breast but if you wanted to just do 2 breast I would just cut the marinade and mexi ranch dressing in half. I didn't mention this in the other post but the longer you leave the chicken in the marinade the better it taste but 3 hours does pretty good especialy if you use one of those foodsaver vacuum marinading containers.

I appoligize for the miss print, all those ingrdients that say 14 c or 18 are suppose to be one forth and one eight, sorry it removed the slashes when I submited.
