4th of July Brisket

<p />Although I have cooked many a brisket on offset style cookers I finally took the plunge and cooked one on the Egg. The final results were most satisfactory. A nice nine pounder and ten hours at 250 was all that was required for a classic Texas meal. If you have not tried it I would recommend giving it a try.

    I swear to heaven, you Texans slay me. You had to hunt to find a small brisket, 9 pounds? He he. That's a large in my limited experience. It looks wonderful! I've got to do one soon. Next weekend if we finish the pulled pork from the 4th. [p]We are having a drought here, but lord, I wouldn't want the flooding I've see in the paper no matter how dry. Hope all is well with you and yours.[p]TNW

    This was a whole brisket, not one of those trimmed or flats or whatever they are called and it is fairly small by brisket standards around here. Most are more in the 10-15 pound range. You do end up with a very fatty thick end piece (point I think it is called) that I usually end up trashing although I reheated this one Friday in foil with a little water sprinked in and it was similar to pulled pork although a bit heavy in fat for my taste. The finer BBQ establishment around here would never serve from that end. I think it becomes chopped beef sandwichs (used to get them 5 for a dollar!).
    Although we have gotten almost 30 inches of rain in this area in the past week we sit up high and were not in flood danger. Our neighbors to the south are having some serious troubles however, many homes have washed away and more rain is in the forecast. A most unusual July to say the least.
