Butt / picnic combo - help please

[p]First time with either picnic or butt. These are small (3 lbs each). Not necessarily into 'pulled' but do want a nice smoky slow cook roast(s). What do you eggsperts think? I have rubbed them down with fresh garlic, kosher salt, a special steak seasoning, dry mustard and thais pepper sauce. They are presently resting in the fridge. Indirect or diret? Use V rack on roaster? elevate or ? Really need some guidence here. 2 hours per lb 200 - 225 degrees? What do you think? Bully

    Bully,[p]Set them in a V-rack inside a waterpan, and go indirect at 250* dome. 250* is much easier to stablize and the pork will cook just fine at that temp. They're done when the internal reaches 200*.

  • DavidR, thanks for the response. Question: how much time do you figure at 250 for two roughly 3 lb pieces. Would two hours a lb do it. Just an estimate please would be appreciated. thanks, Bully

    Bully,[p]I would say 6 hours tops, but don't be surprised to see a 200* internal temp in both of them after 5 hours. Cut your self a little slack either way.
