Fixin to try a Calzone

Well I was gonna try the sausage roll, but decide to try a calzone. Made dough from scratch, and now got sausage, sauce, pepperoni, and cheese stretched into it. Any ideas how hot, or how long? Got a LBGE. Thanks ...-Joshua

    here is the receipe for calzone it will tell you how hot and how long:::

    Pizza, Calzone, Sprinter

    This is a great calzone. There are a myriad of fillings that can be used but this is one of the favorites of my family.


    Ingredients
    1 Tbs olive oil
    1/2 cup grated parmesan or romano cheese
    1/2 cup chopped onion
    2 tsp chopped fresh sage - if you use dried, use 3/4 teaspoon
    1/2 cup chopped green pepper
    1/2 tsp black pepper
    1 recipe of the calzone/pizza dough
    1 lb italian sausage
    1 cup ricotta cheese - this is important as it acts as a binder for the filling
    1 large egg
    1 cup cubed or shreaded mozzarella cheese



    Preparation Directions:
    1 heat the oil in a skillet and brown the sausage - set aside
    2 in the same pan, saute onion and pepper for 5 minutes
    3 press the dough out into a 12 inch circle, dough recipe makes 2
    4 combine remaining ingredients in a large bowl, add veggies and meat
    5 mix well
    6 place ½ of the filling on ½ of the calzone, fold dough over to make a half circle, seal the edges well
    7 repeat for the other calzone
    8 using a fork, make several holes in the calzone
    Cooking Directions:
    1 preheat the egg, using an indirect setup, to 450 to 500 degree dome temperature
    2 place calzone on the pizza stone and cook until golden brown, usually 15-20 minutes
    3 watch through the chimney for doneness
    Special Instructions:
    1 be sure not to allow any of the calzone to hang over the edge of the stone as the crust will burn at these high temperatures

    Hope this is not to late.

    Pizza, Calzone, Mrs. Puj’s,


    Dough
    1 3/4 cups water
    4 1/2 cups unbleached white or all-purpose flour
    3/4 tsp instant yeast
    1/3 tsp Honey
    2 tsp fine sea salt
    1 Tbs olive oil
    Sauce
    12 oz Water
    1 can 12 oz tomato paste
    1 can 15 oz tomato sauce
    1 Tbs chopped basil leaves
    1 tsp Oregano
    1/2 tsp parsley flakes
    1/2 tsp Salt
    1/4 tsp Pepper
    2 Tbs olive oil
    1 tsp Italian seasoning
    1/8 tsp garlic powder
    1/2 tsp sugar




    Preparation - Dough
    1 This dough is prepared using the dough cycle of a bread machine.
    2 Place ingredients into the bread machine,set the dough cycle,and let the machine do its work.
    3 Divide dough into 8 equal pieces and wrap in plastic wrap.
    4 Keep cool until ready to bake.
    Preparation - Sauce
    1 Combine all ingredients into a saucepan and simmer for 45 minutes.
    2 Stir sauce throughout the simmer. Let cool.
    Baking Instructions
    1 Light the egg and place the plate setter and pizza stone in the egg when the internal temperature reaches 200 °F.
    2 Bring the egg to 500 °F to 530 °F and let the temperature stabilize for to 45 minutes.
    3 Prepare the calzone with ingredients that you like;different cheeses, sausages*, pepperoni, vegetables are all good.
    4 Roll each dough ball into a thin rectangle.
    5 Sprinkle corn meal on the pizza peel and put the rolled dough on the peel.
    6 Place the sauce and ingredients on one side of the rectangle.
    7 Fold over the dough and crimp the open ends tightly.
    8 Spread olive oil on top of the dough**.
    9 Bake for 18 to 20 minutes.
    *Recommended to precook all meats prior to baking
