I like to grill them direct with a little EVOO bread crumbs and chile powder. Make sure you slice and press them for an hour or two before grilling, it takes the bitterness out.

I like Big Green Eggplant Parmesan.

Shish-ka-bab. Mix up a double batch of Good Season's Italian dressing using balsamic vinegar and olive oil. Cut the eggplant up into 1 1/2" cubes and marinate in the dressing for a couple of hours along with potabella muchrooms, Vidalia onion quarters, and sweet red peppers.
Skewer and grill direct at around 450 turning every few minutes and brushing with leftover dressing on each turn -

just did an eggplant last nite with chicken.
mmmmmmmm good
Babaganoush:
wash eggplant and poke holes with fork.
set egg at 400 direct heat.
grill eggplant until it is flat, about 30 - 45 mins
remove peel with fork. watch out it is hot hot hot.
add 1/4 stick butter
garlic salt and pepper to taste
mash with potato masher and serve -
I just cut them in half, spread some salt on the cut sides and let drain for about an hour. I rinse them off, coat with EVOO and whatever RUB I see first. I grill them skin down over a direct fire, at about 325 on a raised grate for about an hour, until they get really soft. You can eat the skin and all.
