First time egg user. I recently bought the Egg XL. Definitely excited to smoke stuff on it. I put three slabs of ribs on and cooked them for some friends coming over. No sauce, just some rub and brown sugar. My biggest thing I want to learn is how to control the temperature...it will come with time though.

Looks pretty darn good for first time ribs. The biggest thing with the xl is not to let the temp get too high to start with if you are doing a low and slow. Very hard to get the temp back down once it gets high with that large of an amount of lump as the xl holds.

That looks like some really good ribs. I have a XL and I have put a 18 pan below the ribs that would be on the placesetter lined with foil and I just pick up the foil after each time and it is easy way to keep thing cleaner.
I also took a permenant marker and made black marks above the SS screen door on the top track so I could keep track of where I normally set it for diffent temps.
That has made it a lot easier to get to where I want the temp. I use the sreen door closed because it easier to adjust the air because you have to move it more to make a change in temp. -
Thanks for the tips. My plans to lay foil down on the placesetter fell through when I didn't do it before I started the coals. I haven't cleaned it off yet but suspect it may be a bit of a chore!
I thought about doing something like marker stuff yesterday too. Hearing you say it now confirms that its a good idea. Thanks! -
Put'er on the Egg. Crank it up to 600º and it's self cleaning.

One thing they do look good, you really should cover your plate setter with foil or a disposable pizza tray, so you don't drip all over the plate setter
