Beef, what's for dinner?
I want to do some beef on the egg. I don't have the luxuary of cooking long hours for a large brisket. My first questions is this, If I were to get one brisket and cut in half, do them at the same time, does this cut down the cook time? For example, one six pounder at 2 hrs per pound is 12 hours. Two 3 pounders, cooked at the same time, at 2 hrs per pound is 6 hours. Would the times work out just because I cut the 6 pounder in half?[p]Secondly, are other cuts of beef good on the egg and do they take as much time as a brisket. [p]Thanks for any help. Looking to do about 10-15 lbs of beef at once for the 4th.[p]Omaha Mark

You have some good options if you have a few hours, and I don't think brisket is one of your options. Time per pound is only a very-general rule. Time is based more on thickness, but real life even a small chunk takes a good deal of time in the plateau range to fully break down. You can't expect to reduce the time by very much simply by cutting it in half.[p]That said, beef short ribs, beef tenderloin, or London broil are worth considering! Just some idears.[p]Beers

Omaha Mark, a beef tenderloin is pretty good (expensive) and fairly quick. About an hour for a 7 lb.
