Spatchcock Chicken with place setter (???)

What do you think - spatchcock chicken using the place setter or am I going to reduce the amount of smoke etc I would receive using direct
process? Brian

  • Bully,[p]I've done butterflied chicken both with direct heat and with indirect heat (i.e., with the plate setter turned upside down and the grid lying on top of the plate setter's legs. The direct method was MUCH better, in my opinion.[p]Try both methods for yourself and see which one you prefer.
