ribs help please

I am doing 3 racks of baby backs today, and i want to just get a thumbs up or some advice from the experts out there. I will be doing them indirect over fire bricks and a drip pan, right on the upper grill. No rack or foil. Just a simple rub. Here is where i think i need a little help. I will try to maintain temp at 225-250, how long should i plan on cooking these, and do i need to do the apple juice spray thing or anything else, or just let em go till they are done. Next question is, do i take them right from the grill to the table, or do they need to rest, hop into some foil, or what. I have heard so many different ways, i want to keep it simple, but lip smacking good. These ribs will be for my dad, and he LOVES ribs. No pressure here;).Thanks for any input.

    Seth Howard, if you are doing indirect at the 225 to 250 temp range, you can count on 4.5 to 5 hours - I generally start my at about 1 for 6pm dinner. They can go right from the BGE to the table. Doing indirect, you also don't have to worry about turnung very often. I usualy start bone side down for the first 2 hours, 1 hour with bone side up and then bone down - gives a nice appearance to both sides.[p]The apple juice spray adds a nice touch to the flavor. You may also want to put a litt BBQ sauce on during the last 45 minutes.[p]If you are looking for a nice rib rub, check out the link.[p]Good luck! :~}

    Seth Howard,[p]I do my BB ribs as you describe. Figure 2 1/2-3 hours cooking time at 225-250°. I don't bother with the Apple spray, but that's just me.[p]Kelly Keefe

    If i bump it up to 275-300, will 3 hours do? My son has b-ball till bout 2:30, them home, start fire, ribs on by 3:00 or so, I would like to eat about 6:30. I am going to go for 275.

    me too. I use a laptop all day at work, and when i type on this jimungus key board at home all heck breaks loose!

    Seth Howard, if only a 3 hour time table, I would have a tendancy of going direct starting at the 250 temp and letting it rise to the 300 range during the last hour or so. [p]I use the 5 hour method because most of the time, I have the time. But I have also done direct with great results. If direct, you may want to watch closer and turn more often. BBQ Sauce during the last 25-30 minutes.[p][p]

    should i raise them on my grill extender to keep them away from the heat? this raises them to about the level of the opening. i am a bit concerned about fire. And by the way, I like your son's name! Don't see that very often.

    Seth Howard, sounds like an idea - and if you are really worried, throw a piece of HD foil between the two grids for the first 1.5 hours - it will deflect the direct heat and still not be indirect.[p]We wanted a name that couldn't be shortened, modified or mispronounced - Seth sounded like just the right handle, and it must of fit pretty good - he turned out OK! [p]
