Looking at the whiz's birds cooking on his website, is he indirect or not. If not, why the two grids?

he has used fire bricks and 2 grills to raise the cooking grid as chicken tends to burn easy so it is direct but just higher then normal and let me tell you this is FANTASTIC chicken you and your will love it

c.r.,[p]You cook it direct. The reason why you put the chicken on an elevated grid is that it greatly reduces the chances of a grease flareup from the fat. I've tried it both ways, and I discovered that if you want to to use the main grid only, you should reduce the temp from 350* to 300*. But after many spatchcocked chickens, it's simpler just to follow TNW's instructions to the letter
