What is the opinion of those of you who have used both fire bricks and a plate setter for cooking pizza, ribs and other fare where you want indirect heat. I am debating whether to spend the extra $$ for a plate setter ($32.50 at my dealer), or buy a few fire bricks for $.92 each. Thanks for the benefit or your experience.

  • Steve-O,[p]I have both, and have used both. I like the platesetter better for several reasons:
    1. It's easier to setup.
    2. It allows me room to toss wood chunks or add lump to the fire from the sides. With fire bricks, I have to remove the whole setup.
    3. It provides a better surface for a pizza stone.
    4. I think it provides better airflow around the sides.[p]All in my opinion, but there ya go.[p]Cheers![p]- Mike[p]

    Steve-O,[p]Ditto what Mike said. I use my plate setter on better than 75% of the cooks I do. Well worth the money. While I haven't done a pizza without the plate setter, I think the heat the extra mass gives off would probably help the baking process. (A WAG, but there ya go.)[p]Don't rule out getting some fire bricks though. They're handy (and cheap) to have around. For example, if you want to cook Sates, put two or three fire bricks on top of each other at both ends of the grill, then set the bamboo skewers with the food on top of the bricks. The bricks help keep the bamboo from burning and your food won't stick to the grill.[p]Kelly Keefe
