roasted corn, roasted red pepper, celery, tomato on a bed of baby spinach
as above but with avacado for me
black sesame seeds on this side
white on the other
light rub of wasabiyaki to help the sesame seed stick, a bit of green tea salt and ponzu for dipping

That looks incredible! You didn't even have to cook the fish, either :P Thanks for the inspiration--I think I'll be trying some of that later in the week. -
tuna for me is like a combination of red meat and sushi. the good stuff is a bit pricey and what you see is sushi [raw] quality. not something i do often given the way my sons eat. but is is as different from canned tuna as chicken is from beef. if you like to here the cow moo on your plate and like sea food, this is heaven .

i looked at the gray while it was cooking and used the thermopen .. center of the thickest part was 80° when i took it off and slice right away. be warned i like beef that moos and raw fish.

i rubbed a little bit, less than a tablespoon. on each side to help the sesame seeds stick.

bill that looks great! I have been craving something like that for a while. We have a new Chineese place in town that is giving the old one some competition. Quality of sishie is coming up but still mostly rice with a little fish. I remember a while back you made some sishie. Where did you get your wrappers and rice at? Did you order them or get local? The wife will not like that but will cook hers done. Thanks for the idea bill!!

i get the nori [wrappers] at the local asian market the rice too. you should be able to find the rice at a decent size grocery store. i can mail you wrappers if you want. i will post the pics of the sushi makins later today. time for work.

Just so folks get the right thing from the fish market. There are 8 species of tuna and yellow tail ain't one of them. There is a Yellowfin tuna and there is also a yellowtail fish. And, there is a difference.
Also, whatever you cooked, it looks perfect.
