Brunswick Stew

So I have a large pork bone with lots of clinging meat left from the whole picnic I did on my egg yesterday. Was thinking of breaking out the crock pot, throwing in the bone, and setting it on low before I leave for work tommorow morning, then using the results for a base.
Any recipes &/or suggesitons?

Stew, Brunswick, Moon Shadows
INGREDIENTS:
1 pint pulled pork
1 pint pulled chicken
1 pint pulled beef brisket (optional)
2 14 oz cans diced tomatoes
1 32 oz box chicken broth
2 cups ketchup
1/4 cup spicy brown mustard
1/4 cup balsamic vinegar
2 large onions diced
3 medium potatos peeled and diced
1 package frozen lima beans
1 package frozen corn
4 Tbs Moon Shadows Rub
4 bay leaves
4 fresh sage leaves
4 Tbs olive oil
Procedure:
1 In a large stock pot, saute' the onions until soft. Add remaining ingredients except for the sage and bay leaves. If you need a little extra liquid add water. Simmer for 90 minutes. Set the bay leaves and sage on top of the stew and simmer for another half hour. Remove the leaves, stir, and serve. I've had a lot of Brunswick Stew in my time, but I threw this together last night and we all agreed, it's the best we've ever had. It's a nice way to enjoy your leftovers.

Off the top of my head;
Potatoes and onions (I saute in butter)
limas
creamed corn
I make a sauce- make or use your favorite.
Chicken broth to desired consistency.
The recipe I use is from '92 or '93 (I forget) Southern Living Annual Recipes.
Don't worry, just add what you like; you akready are off to a good start with your pork.

this is the recipe i liked the most. the pulled pork needs to go thru a grinder for my tastes as it gets stringy if just tossed in.
