Cast Iron Griddle ~ Uses For On Egg

What all do you guys and gals cook on cast iron skillets or griddles. I was gifted with this one; ribbed on one side and slick with a small rim on the other side.

I've seen many posts over the years, just never paid close attention. Bonus with this one is that I don't have to cut off the handle. :laugh:

    Here is one way: Did you get my mail the other day?

    Sandwich, Chickuletta, Spring Chicken


    INGREDIENTS:
    Sourdough Bread, sliced
    Zatarin's Creole Mustard
    1/4 Lb Provolone Cheese, sliced
    1/4 Lb Mozzarella Cheese, sliced
    1/4 Lb Ham - thinly sliced
    1/4 Lb Chicken or Turkey - thinly sliced
    1/4 Lb Geonoa Salami --thinly sliced
    1 Cup Boscoli Olive Salad Mix (from Central Market in New Orleans)

    Preparation :
    1 Put cast iron griddle in egg on top of the grid (no platesetter is needed).
    2 Heat to 350°F-400°F.
    3 Butter the outside of two slices of bread and place butter-side down.
    4 Spread mustard on one side, add cheese and about three slices of each type of meat.
    5 Top with Boscoli Olive Salad.
    6 Press together.
    7 Cook on BGE until toasted.

    That looks real good Richard. We have a market with an olive bar, self serve and many choices. I need to check it out closer next time I'm there.

    The last e I got had the duck and chile recipes.. Pork shoulder has been a $1 a pound lately, I made a big batch of green chile for the freezer, some sausage and I need to do pozole too.

    WTH Richard!?!..how did a post about making muffulettas get into a post about CI griddles??... lol...anyways thirdeye..I'm still lookin for that perfect egg griddle...I use DO some and for cornbread a 8" CI skillet that still has the handle on it cuzz the wife would kill me if I cut it off... still need something big enough to cook a large sausage and eggs breakfast on...only reason I still have to use the ol gazzer... :angry: :pinch: :(

    Did a 4# chub of bologna and some eye of round recently. Got a jaccard for the eye great tool.

    If you read the recipe there is a CI griddle in the program.

    I guess this smaller version would only handle breakfast for two. But it would get me off the stove.

    I talked to Mike tonight. They have some very serious flooding on the East coast. He swears by the lifter. I have a cross hatch pattern on my deck from dropping the cast iron grid when I use tongs.

    Like your picture above but with hashbrowns/onions/green peppers and some cheese at just before pulling.

    Dogs, brots, sausage. I cook blackened trout and catfish on one. I love using it with the spider, normal and inverted.

    BTW, your grid lift is sure nice to have.

    by the way steve you box is almost all packed up,when i got home my wife had a few things to add in there for ya!!

    I cooked a ham steak on it tonight, and thanks for mentioning the spider. I just checked and it fits perfectly. Looks like I'll need a new tool to lift it in and out. It does have holes on the handles.....back to the drawing board. :laugh:

    You know that is a good idea. Possibly like the currnet lift but with 3 'fingers' 1 to go into the hole then 2 to each side to give some left/right stability.

    That ham steak looks pretty nice indeed.

    My two favorite accessories is your lift handle and the spider.

    Oh yeah, those must be made from the "Chickuletta" recipe that Richard posted above. Thanks for the visual, that is on the list.

    Heck, even a fancy grilled cheese and tomato sammy would be tasty too.

    I'm thinking a T welded on a stainless bolt for starters. It would be a two (gloved) hand lift but shure would be easy.

    i just got some tomaters that are called green zebra... supposed to be green and black striped.. the produce man at my local grocery store gave me ones he raised from seeds.. i have never heard of them but sounds weird but i will eat almost anything, that i have not fished with :sick::whistle: :silly:


    also waiting now on the egg to cool down so i can load it with some fresh lump light it around four or five in the morning and throw my 2nd brisket on... i am getting ready to rub it now.. thanks for your insight from your page ;)

  • Reading this post a little late but if you ate looking for a double sided ROUND cast iron griddle you can find one at Academy Sports stores. Around $20 for on to fit the large egg.

    That is one good looking griddle. Did you have it made? Looks like it fits the large just right. Wondering if I could get one like that to fit the XL?
