Ilona, For simple results, grill with butter and lemon juice mixture basting as you go. I usually cook around 400-450. Depending on filets size will depend on time. I do turn frequently.
Do a search for mahi mahi and you will find a lot of recipes. I got a recipe I haven't tried yet but check in in a few days and I'll post results.[p]CWM

Ilona,[p]As Mike said..use high heat and flip a couple of times. You want the meat to turn just opaque. Use a knife to separate the flesh and look down into it for doneness.[p]Here is a great Teriyaki Marinade for it.....[p]Stogie
___________________________________________________________[p]Teriyaki Marinade for Mahi Mahi [p]1/4 cup Soy sauce, dark
    1/4 cup Sweet sherry
    1 tablespoon Vegetable oil
    1 tablespoon Brown sugar, light
    1 teaspoon Ginger, fresh, chopped
    1 teaspoon Garlic, minced[p]PREPARATION:
Combine all ingredients and whisk together.[p]Marinade fish for 30 minutes.[p]If you want to use the remaining marinade for a mop, be sure to boil.[p]Grill fish over high heat.
