What a difference a day makes!
Same dough (24hrs in fridge), same sauce - better method.
Rearranged fire bricks, made a smaller pie, stabilized temp (this time at 650), brushed a little olive oil on edge of crust
The results: AWESOME!
This really was one of the best pizzas we ever had.
I think the dough benefited from the extra time in the fridge.
Thanks for all the good advice. It made the difference. A lot of cooking success comes from approaching it with confidence, IMO. Thanks again for all the good input...
