I grew up thinking that the only way to eat salmon was in a fried croquette. I'm learning differently. Last night I tried something different (at least for me) on the Egg.

I made the patties using a can of good quality Red Salmon, left over garlic rosemary potatoes, onion, parsley, dill, lemon, bread crumbs, an egg, and salt and pepper. I then bacon wrapped them to hold it all together during the cook (I removed the bacon prior to serving) , and drizzled both sides with olive oil.

I didn't have the fire hot enough to start with, but it caught up quickly. Grilled about 5 minutes per side or until a nice crust developed. They were very good.
