Great day of fishing yesterday. Looking for a good Mahi-Mahi recipe. Any help would be great. Never done fish on the egg yet!!

    That's a nice fish, rather thick filet. I had a memorable mahi baked in a paper bag from a seafood joint on Maui. They made a ginger-butter sauce and when the bag was opened table side and my fish plated, the server poured sauce around the fish. Really good. The egg can do better.....


    INGREDIENTS:
    Butter sauce
    1/2 Stick Butter
    1 Oz. White Wine
    1 Tsp. Ginger, Fresh
    Pinch Cayenne
    2 Cloves Garlic, minced
    1 Tsp. Brown Sugar
    Sea Salt to taste




    1 With the egg burning clean at 400 dome, grill direct on oiled grid, brushing fish with butter sauce until fish flakes with a fork test and is opaque. (about 8 minutes?)
    BUTTER SAUCE
    1 Simmer to reduce and take some out for basting fish when grilling, reserving the rest for the dinner plate

  • I cooked some the other night. Here's what I did...

    Put a large cast iron skillet in the egg and heated to 500*. I dipped the fillets in butter then coated with blackening seasoning. Cook for a couple minutes per side until flaky. Serve with some fresh tartar sauce.

    Blackening Seasoning:

    2 tablespoons sweet paprika
    2 tablespoons sea salt
    2 tablespoons onion powder
    2 tablespoons garlic powder
    2 teaspoons ground cayenne pepper
    1 tablespoon + 1 teaspoon ground pepper

    not a recipe, but if your catching your own try steaking some pieces instead of filleting them. i like steaked mahi way better than filleted.

    Here's an easy one that I like. I haven't made it since I got our Egg but it came out great on our Brinkmann Professional Charcoal grill last year. For the egg, I'd guess 450f or so for about 3 minutes per side.

    Mahi Mahi Maui Style
    Yields: 4 posted as 162608

    Ingredients

    1 1/2 pounds mahi mahi
    1 teaspoon butter
    1 garlic
    1 teaspoon teriyaki sauce
    2 teaspoons lemon juice
    1 teaspoon honey
    1 teaspoon sesame seeds

    Instructions
    Melt butter in a skillet and brown garlic. Remove from heat and add teriyak, lemon juice, honey, and sesame and mix well. Marinate fillets 30 minutes. Grill over medium coals until white and flakey.

    Here is a recipe from PV Mexico. They were grilling the fish on sticks over wood coals and coating the fish with this mixture as they grilled it. Our waitress was the only English speaking lady and I asked for the recipe.

    The mix
    Achiote
    Butter
    Garlic
    Bay leaves
    Orange jucie

    They made this liquid and cooked it down some. And than spread it on the fish as it was being grilled on the coals.
    I do not know the amounts but Achiote is a local seasioning and does not take much. The rest is put into a orange or pinapple juice and cooked
